Pumpkin Harvest Soup

Ingredients
  

  • 1 small pumpkin, peeled & diced
  • 2 carrots, peeled and chopped
  • 1 sweet potato, peeled & cubed
  • 1 onion, diced
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 tsp cinnamon
  • 1 tsp cumin
  • salt and pepper to taste

Method
 

  1. In a large pot, saute' onion in olive oil until soft
  2. Add pumpkin, carrots, sweet potato, cinnamon, cumin, salt and pepper. Stir to incorporate.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 25-30 minutes, until the vegetables are tender.
  4. Blend the soup until smooth, then stir in coconut milk.
  5. Serve with a drizzle of olive oil and a sprinkle of cinnamon.
